Steak Fajitas


Go Mexican for dinner tonight, with these tasty beef fajitas.

The ingredient of Steak Fajitas

  • 550g coles scotch fillet steaks cut into thin strips
  • 30g packet taco seasoning
  • 1 garlic clove crushed
  • 2 tablespoons olive oil
  • 1 red onion thinly sliced
  • 1 yellow capsicum or red capsicum seeded thinly sliced
  • 500ml beef stock
  • 2 tomatoes finely chopped
  • 2 tablespoons coarsely chopped coriander plus extra sprigs to garnish
  • 1 tablespoon lime juice plus extra wedges to serve if desired
  • 4 burrito tortillas warmed
  • sour cream to serve

The Instruction of steak fajitas

  • combine beef strips taco seasoning and garlic in a large snaplock bag seal bag and toss to coat
  • heat 1 tbs oil in a large non stick frying pan over medium high heat cook the beef for 1 2 minutes each side or until browned and cooked through remove and set aside on a plate
  • add the remaining oil to the pan and cook onion for 1 minute add capsicum and cook stirring for 2 minutes until just softened remove and set aside with beef
  • add the stock to the pan stir and simmer for 10 minutes or until stock reduces to 1 4 cup return the beef onion and capsicum to the pan and stir to coat remove from the heat
  • combine tomato coriander and lime juice in a small bowl season serve tortillas topped with beef mixture tomato salsa and sour cream garnish with coriander sprigs and lime wedges if desired
