- 1 2kg beef bolar blade roast excess fat removed
- 6 golden delight potatoes peeled quartered
- 4 medium carrots halved lengthways
- 1 tablespoon olive oil
- 1 4 cup chopped fresh flat leaf parsley leaves
- 1 3 cup instant roast meat gravy powder
- horseradish cream to serve
- extra chopped parsley to serve

- using kitchen string tie up beef at 4cm intervals to secure
- place potato and carrot in the bowl of a 5 5 litre slow cooker heat oil in a large frying pan cook beef turning for 5 minutes or until browned all over place on vegetables in cooker add 3 4 cup cold water to cooker sprinkle with parsley season with salt and pepper
- place lid on cooker cook on high for 3 hours or low for 6 hours
- transfer beef and vegetables to a large plate thickly slice carrots cover loosely with foil to keep warm sprinkle the gravy into the sauce in cooker whisk well to combine cook whisking often for 5 minutes or until gravy thickens
- slice beef serve with vegetables gravy horseradish cream and extra parsley
